Us gingers never get any slack. Oh well, we DO have the red hair. Anyway, here is a nice twist on one of the classics. Originally made for me by Patrick Bruce at Thistle in McMinnville, but I have bumped the ginger to a full ounce (from a half) because that's just how I am 🙂
1.5 ounces Mt Gay Eclipse Rum
3/4 ounce Lime Juice
1 ounce Spiritopia Ginger Liqueur
1/2 tsp Simple Syrup
Combine in a shaker with cubes. Shake and then strain into a cocktail glass.
