Ginger Caramel Sauce

1 C Sugar
1/4 C Water (approx)
1/2 C Heavy Whipping Cream
1/4 C Salted Butter
1 T Vanilla
Pinch Salt
1/2 C Spiritopia Ginger Liqueur

In a medium thick-bottomed pan, add the sugar. Slowly add just enough water until the sugar is wetted. Gently stir the mixture, avoiding getting any on the walls of the pan. Let mixture cook without further stirring, until it reaches a dark golden brown. Watch it carefully - it can turn quickly. As the sugar is cooking, heat the whipping cream until it is hot but not boiling (microwave works well). When the sugar is brown, take it off the heat and and carefully whisk in the whipping cream. Mix thoroughly and then add butter, vanilla, and salt. Taste and adjust salt. Finally, stir in the Ginger Liqueur.
