Q?
What temperature should I serve the Strawberry-Rhubarb Aperitif?
-
A.
Great question. The strawberry-rhubarb is a bit unique and hard to classify. It has aspects of a dessert wine, which is typically served cold (40-45F).Since the SR is somewhat less sweet than many dessert wines, the optimum might be a bit higher toward 50F. I have not done a full test yet myself. As you increase the temperature, the perception of sweetness will probably increase slightly. At the end of the day, I suggest chilling in the frig andthen slowly sipping a glass over time so see where you like it best. Enjoy! -

Q?
Why is the company name of Spiritopia Liqueurs called Oregon Ryegrass Spirits?
-
A.
Well, that's a bit of a story. Back when I was doing ethanol research, I discovered some cool stuff about how to make a unique whiskey from ryegrass. Not rye the grain, but ryegrass like turf and grazing. The flavor it adds is kind of earthy/smoky and reminds me of a cross between a single malt and a good cachaca. Anyway, we still hope to do that at some point. However, the "new-ness" turned out to be a bit of a problem because the TTB (Alcohol Trade and Taxation Bureau) wasn't sure if they could approve it. So they asked the FDA and now there is plenty of red tape to go around. Nobody thinks there is a problem, but nobody wants to be the one to say so. Sheesh. If it ever gets straightened out, we will start getting some in oak to mature. We plan to focus on liqueurs and the whiskey is in a holding pattern. In 2015, the official name was changed to Spiritopia Liqueurs, LLC.
