Great whiskey starts with great water. Great water comes from healthy watersheds. In the "spirit" of this thinking, we are making Willamette Whiskey. The water comes from the Santiam River, a major tributary of the Willamette near the distillery. We build on that base with an innovative mash bill that inlcudes a touch of crystal malt (roasted barley) that adds a bit of richness with its caramel notes.
Willamette Whiskey will be our first product where we dedicate a portion of the profit to environmental causes. The focus is on water quality and we are reviewing various projects and organizations here in Oregon. (If you would like to nominate a worthy effort, please feel free to contact me). In any case, we're eagerly awaiting the release of this whiskey that we hope to lives up to the moniker "water of life" in both taste and positive impact on the watersheds of Oregon.
