Sweetness is a key feature that sets liqueurs apart from other spirits. In fact, liqueurs must be at least 2.5% sugar, although most are much more than that. However, like most good things, you can over do it. As always, we aim for balance that allows the essence to shine without becoming cloying. For our ginger liqueur, we use raw, organic cane sugar. We do not and will not use high fructose corn syrup or any artificial sweeteners. In fact, we don't use any artificial anything! In future products, we would also consider other natural sweeteners such as honey, agave, or even a bit of maple syrup if there was a particular complementarity to the essence of the spirit.
